Frying tomato paste – how to do it right

- If you are using tomato paste in a recipe, you should fry it lightly before further processing.
- Frying reduces the acidity in the tomato paste. It also caramelizes slightly, giving it a caramel-like roasted aroma. Sautéing the tomato paste makes it more flavorful overall.
- Put some oil and tomato paste from a can or tube in a pot and heat the ingredients. Lightly sauté the tomato paste on low heat. Then deglaze with the cooking liquid.
- Tip: To give the tomato paste an intensely spicy flavor, you can also fry it together with an onion and a little garlic.
