Jacket potatoes are easy to cook and can be combined with whatever you like, such as fish or quark.
How to cook jacket potatoes
All you need to prepare them is a large pot, the desired amount of waxy potatoes, a little salt, and water. Then you’re ready to go:
- First, roughly clean the potatoes and remove any black spots. Sort out any green or sprouting potatoes beforehand.
- Fill the pot with water and add potatoes of similar size. The potatoes must be completely covered with water. Add a little salt.
- Bring the water to a boil. Depending on their size, the potatoes in their skins will need around 20 to 30 minutes in boiling water. Very small, waxy potatoes take around 20 minutes, while larger, floury potatoes need around 30 minutes.
- If you cook the potatoes in their skins in a steamer, you will retain more nutrients. The potatoes should be cooked at around 100 degrees Celsius. Cooking time here is also a maximum of 30 minutes. Alternatively, you can use a pressure cooker. Wait until the pressure is reached and then reduce the heat. Leave the potatoes to cook for up to 15 minutes.
- You can check whether the jacket potatoes are ready with a skewer test. Simply take a wooden skewer or a fork and pierce the potato. If the skewer slides into the potato without much resistance, it is ready and you can drain the potatoes.
- Tip: If you score the potatoes lightly with a knife beforehand and rinse them with cold water after draining, they will be easier to peel.
Cooking and storing jacket potatoes
Once you have cooked the potatoes in their skins, you do not have to eat them straight away.
- The cooked potatoes in their skins will keep in an airtight container in the refrigerator for up to three days.
- You can use the potatoes in a potato salad, make fried potatoes, or simply use them again for other potato dishes.
