If you have eaten a bitter zucchini, this does not have to have any consequences. However, occasionally a bitter zucchini can be poisonous and, in the worst case, lead to death.
Dangerous: zucchini tastes bitter – then the vegetable can be poisonous
Zucchini is an edible pumpkin and is popular because of its mild taste. In rare cases, however, it can have an intense, bitter taste. This should be taken as a serious warning signal, as the bitter substances it contains can be poisonous.
- The fact that zucchinis occasionally taste bitter is not unusual. The bitter substances responsible, known as cucurbitacins, have been largely removed through breeding. However, zucchini can produce these substances again in dangerous quantities under certain conditions.
- Why zucchinis can be poisonous: Cucurbitacins, which are also found in other plants such as cucumbers or pumpkins, serve as natural protection against being eaten. Not only do they taste extremely bitter, they are also poisonous. Even eating small quantities can lead to health problems such as gastrointestinal complaints, while larger quantities can be life-threatening.
- How poisonous courgettes develop: Although commercially available zucchinis and their seeds are free from cucurbitacins, there are factors that can lead to the formation of new bitter substances:
- Home-grown: Home-grown courgettes can develop bitter substances again under unfavorable conditions such as drought or plant stress.
- Crossing with ornamental pumpkins: If zucchinis are grown in the vicinity of ornamental pumpkins, unwanted cross-breeding can occur. As ornamental pumpkins contain high amounts of cucurbitacins, these crosses can result in poisonous zucchinis.
- Age of the fruit: The older a zucchini gets, the more bitter substances it can accumulate.
Zzucchini – then eating it becomes dangerous
The bitter taste of a courgette is a reliable warning signal. Just a small bite is enough to determine whether a zucchini is bitter. If it is, it should be disposed of immediately and never eaten again.
- Taste: An intensely bitter taste is the most important distinguishing feature.
- Smell: An unusually pungent or unpleasant smell can also be a warning sign.
- Appearance: An unusually rough or deformed shell can be a clue.
- Heat resistance: In contrast to other toxins, cucurbitacins are heat-resistant. Sautéed zucchini can therefore be just as poisonous as raw zucchini.
Poisoning symptoms and first aid
If you have eaten poisonous zucchinis despite all precautions, the symptoms usually appear after a short time. These include:
- Stomach cramps
- Nausea and vomiting
- Diarrhea
- Dizziness
- Circulatory problems
- A doctor should be consulted immediately or an emergency doctor called, especially if the symptoms are severe. Self-treatment is not advisable, as the effects can be serious depending on individual sensitivity.
