Homemade alternative: Vegan cashew almond milk mascarpone
You can also make vegan mascarpone yourself. You will need the following ingredients:
- 70 g ground cashews
- 150 ml almond milk
- 100 ml oil, preferably a neutral oil
- one packet cream stiffener
- Half a teaspoon of vanilla
- Two teaspoons of lime juice
- 130 g of virgin coconut oil at room temperature
- A pinch of salt
How to make vegan mascarpone
Vegan mascarpone can be made in five minutes. However, after preparation, it must be refrigerated for three hours.
- Place all ingredients in a blender.
- Blend everything on the highest setting for two minutes until smooth.
- Place the mascarpone in the refrigerator for at least three hours.
- Before using it, for example in a tiramisu, gently whip the cream. A cream whisk is ideal for this.
