If you want to stay healthy and boost your immune system with sauerkraut, pay attention to the quality of the cabbage.

  • In organic stores you will find fresh sauerkraut that has been mixed with sea salt. You should avoid cabbage seasoned with table salt, as table salt is incomplete and creates a deficiency in your body as a result.
  • Sea salt or rock salt, on the other hand, are natural and complete. They contain everything the body needs to break down and utilize the salt and therefore do not produce any deficiency symptoms. This means that the body does not have to draw the missing minerals from reserves, bones or muscles.
  • Sauerkraut must also be unpasteurized and you should not heat it, otherwise the lactic acid bacteria will die. Then it may still taste good, but will no longer have the same benefits for the intestinal environment.
  • If you eat pasteurized or heated sauerkraut, you can still benefit from the plant fibres it contains. These are natural dietary fibers that serve as food for healthy intestinal bacteria. They are also abundant in fresh cabbage and fiber-rich vegetables.
