Grilling bratwurst: Tips on temperature, duration & co.

When grilling a bratwurst, the temperature is responsible for its success. The method of reverse cooking can also ensure that you serve the perfect bratwurst.

Grilling bratwurst – this is the right temperature

The best temperature for grilling a bratwurst is between 180 and 220 degrees Celsius. However, it is not so much the temperature itself that is important, but the correct temperature curve. To check the temperature regularly, a barbecue thermometer is the right tool of choice.

  • There are a few things to consider when grilling a bratwurst, starting with the preparations: Cutting into the bratwurst increases its surface area. A larger surface area means that there is more surface area for the roast flavours to develop. Of course, roast flavours are only delicious in moderation.
  • The cuts prevent the sausage from bursting open uncontrollably. Instead, the gases produced during frying escape through the cuts. The fried sausage thus looks appetising in its finished state.
  • Grill the sausage using the reverse cooking method. To do this, first place the sausage in an indirect zone. This is the zone where it is not the hottest. The sausage should be cooked inside first before it is toasted.
  • If you only have a small grill and no way to put the sausage in an indirect zone, for example when grilling over a campfire, then an aluminium tray can help you. This minimises the heat. Cooking in the tray takes about 20 minutes.
  • Once the sausage is cooked inside, you can start to brown it. Now place the sausage in the direct zone. This is the zone where it is comparatively hot.
  • If the bratwurst is pre-broiled, grilling takes about 7 minutes, raw sausages take 10 to 12 minutes to cook.
