Beef as a Protein Source
Red meat, such as beef, is very popular among athletes. It’s considered one of the best sources of protein, as 100 g of beef contains, depending on the cut and fat content, approximately:
- Lean beef: about 21–26 g of protein
- Average beef (mixed cuts): about 18–22 g of protein.
The following recipe boosts the already impressive protein content of the beef even further. That’s because it also includes peas and delicious herbs. While the herbs add flavor, the legumes provide additional protein.
Protein Steak: Here’s How It Works:
You can also prepare this recipe in a skillet, but it won’t have the typical grilled flavors. The ingredients are for 1 serving, but can be adjusted for more people as desired.
Here’s what you’ll need:
- 120 g club steak or filet mignon
- 5 spears of green asparagus
- 10 bush or snap beans
- 70 g peas
- 3 tbsp olive oil
- 30 g parsley
- 5 g cilantro
- 30 g olives
- 1 tbsp spicy paprika
- 1 scallion
- Juice and zest of ½ lemon
- Salt and pepper
Here’s how to prepare the protein steak:
- Season the steak on both sides with salt and pepper. Then grill it on the preheated grill to your desired doneness—for example, 4 minutes per side for a steak that’s 2.5 centimeters thick.
- Set the steak aside and let it rest. Meanwhile, cook the asparagus, green beans, and peas on the oiled grill for about 3 minutes .
- In the meantime, prepare the sauce. To do this, chop the herbs and finely dice the olives and spring onion. Combine everything in a bowl with oil, lemon juice, and zest. Season with paprika, salt, and pepper.
- Now it’s time to serve. Cut the meat into pieces and arrange them over the vegetables. Drizzle the sauce over the top.
